Preheat your oven to 350 degrees. Mix all ingredients in a large bowl. On the baking sheet lined with parchment paper, arrange the pieces of bell peppers and fill in the stuffing. Place the sheet inside the oven and bake for half an hour or till the peppers are tender.

You can also pair this dish with some boiled eggs with slightly sprinkled chili powder for that protein kick!

In a bowl, beat those eggs, add spices and salt according to your taste. Heat the pan and pour in your egg mixture. Once the eggs are semi-cooked flip onto the other side and place your mushroom-spinach mixture in the center. Fold the egg in a roll and serve hot!
